Roasted Chickpea Wrap
Ingredients
- Chickpeas (canned in spring water, drained and washed before use). - 2 x 400g cans
- Olive oil - 2 tbsp
- Ground cumin - 2 tsp
- Smoked paprika - 2 tsp
- Black Pepper - Pinch / Sprinkle to taste
- Iceberg lettuce shredded - 200 g
- Sour Cream - 8 tbsp (128g)
- 2 medium red peppers, roasted, - 2 x 160g
- 5 x large Plain tortilla Wraps - 5 x 67g each
Instructions
Step 1: Roast the Peppers
1 Heat the oven to 220°C/200°C fan / Gas 7
2. Line a large, flat baking sheet tray with a baking sheet / baking parchment.
3. Halve the peppers, remove seeds and arrange on the baking sheet cut side down.
4. Roast for 30-35 minutes until the skin is shrivelled and lightly blistered.
5. Set aside to cool completely before peeling.
6. Slice the roasted peppers lengthways into thin slices.
Step 2: Roast the chickpeas
1. The chickpeas can be roasted in the same oven (220°C/200°C fan /Gas 7) as the peppers.
2. Put the drained and washed chickpeas into a large bowl.
3. Add the olive oil, cumin and paprika.
4. Stir the chickpeas to coat well, then spread them onto a large baking tray and roast for 20 -25 minutes or until starting to crisp. Shake the tray half way through to ensure they roast evenly.
5. Remove from the oven and season with black pepper to taste.
Step 3: Warm and fill the Tortillas and serve.
1. Warm the Tortillas following the pack instructions.
2. Weigh approximately 100g of the roasted chickpeas per portion.
3. Fill the warmed tortillas with shredded iceberg lettuce, roasted red peppers, sour cream and roasted chickpeas, serve and enjoy.
