Raspberry Fruit Fool
Ingredients
- Frozen raspberries (1 bag) - 350g
- Double cream, whipped - 300ml
- Caster sugar - 40g
Instructions
1. Pour the frozen raspberries into a large bowl and sprinkle the caster sugar over them. Place in the fridge and allow to sit and thaw for up to 1 hour.
2. Whip the double cream whilst waiting for the raspberries to defrost.
3. Once defrosted, puree the raspberry and sugar mixture in a liquidiser or blender. Pass this mix through a sieve to remove the seeds. Discard the seeds.
4. Gently fold in the whipped cream. Divide into four dessert bowls. Serve immediately or chill for serving later.
