Jam Turnovers
Ingredients
- puff pastry - 225g (9oz)
- jam - 225g (9oz)
- egg white - 1
- castor sugar - 25g (1oz)
- double cream - 4 tablespoons
Instructions
- Roll out the pastry to a thickness of 0.5cm (¼ inch). Using a cutter, cut into 10cm (4inch) rounds. A saucer or small side plate will do if you don’t have a cutter.
- Roll each round until slightly oval 12 x 10 cm (5x4 inches). Moisten the edges, using a pastry brush dipped in water.
- Place a little jam in the centre of each. Fold over and seal firmly. Brush with egg white and sprinkle with caster sugar.
- Place sugar side up on a greased baking tray and bake for 15-20 min in a hot oven (220 ºC, Gas mark 7, 425 ºF)
- Serve with double cream.
This dish does not use up any of your kidney diet allowances but is a treat food and should be eaten in moderation as a kidney safe treat. Best avoided if you are trying to reduce weight or have Diabetes.
